Fried Eggs with Okra
Okra is one of my favorite veggies; honestly, I'm into slimy textures, which is why I'm a fan of some unique Japanese foods like natto and octopus. So, here's a recipe for Fried Eggs with Okra.
Okra is a superfood loaded with fiber and vitamins that are great for your gut and heart. Give this easy and healthy recipe a shot to mix up the textures in your daily meals.
Ingredients
For this simple recipe, you will need:
Eggs (3, beaten)
Okra
Salt
Neutral oil
The secret to a well-made Chinese scrambled egg
The secret to a well-made Chinese scrambled egg is lots of oil. Restaurants add a lot of oil in their scrambled eggs so that they emulsify and achieve that succulent and super flavourful taste. However, adding too much oil is way too unhealthy for the home kitchen, so we will move on to the next secret.
The other secret is to have a hot wok and cold oil. By heating the wok dry until it starts to smoke a little bit before adding oil, we create a non-stick coating that is perfect for scrambling eggs. After adding the eggs, we want to bring the egg from the outer side of the wok to the inside, so that the egg doesn't overcook. Since the cooking doesn't take long, we will par-cook the okra beforehand.
Step-by-step guide to Fried Eggs with Okra
Wash the okra using water and salt: To remove the fuzziness on the outside of the okra, rub each okra with some coarse salt and rinse it with water. After that, cut the okra on a bias into something like this.

Par-cook the Okra: In a pot of lightly salted boiling water, blanch the okra for 1-2minutes until it is almost cooked through. Set aside.

Cook the egg: Gently heat up a wok on a medium-low heat until it smokes. Add some oil to the work, swirl it around, and immediately add your eggs and season with salt. Bring the eggs on the outside to the middle of the wok as shown below. The liquid egg will cover the gap you just made. Repeat until the egg is mostly set.

Add the okra: At this point, add the okra and stir to combine. Be careful not to overcook the egg. Serve hot on a plate.

That's it! This is an extremely healthy and simple weekday meal that is both delicious and nutritious. If you like, you can add a little bit of soy sauce on top to add some umami. Enjoy!
